Easy Breakfast Casserole

Put together this super easy breakfast casserole in no time. Perfect for a a fast breakfast option, brunch, or company. You can substitute the sausage for bacon or ham if you wish.

Easy Breakfast Casserole

Equipment

  • 1 Hand Mixer
  • 1 Baking dish 9 x 13 inch

Ingredients

  • 1 lbs sausage (cooked)
  • 1 can Grand biscuits
  • 1/2 cup Half and Half
  • 1/2 cup Milk
  • 8 Eggs
  • 8 Frozen Hashbrown patties (or 2 cups of grated potatoes)
  • 1 pkg Grated cheddar cheese (16 0z)

Instructions 

  • In a 9x13 baking dish put biscuits in the bottom of dish. Pat into bottom of dish like a pie crust.
  • Add hashbrowns on top of biscuits
  • Add cooked sausage on top of hashbrowns.
  • Beat eggs and milk mixture together well and pour on top over the sausage.
  • Add a 16 oz. package of mild shredded cheddar cheese. Use any kind of cheese you wish.
  • Bake in a preheated 350 degree oven for about 30 minutes or until biscuits are completely done.
  • Let stand for about 5-10 minutes before cutting.

  • Greek yogurt or your choice of yogurt. We use plain vanilla yogurt.
  • Granola
  • Fresh fruit (such as berries, sliced bananas, or mango)
  • Honey or maple syrup (optional for Greek yogurt to added sweetness)

 

  • Begin by layering the bottom of a glass or serving dish with a spoonful of yogurt.
  • Add a layer of fresh fruit on top. You can use any combination of fruits you like.
  • Repeat the layers until you reach the top of the glass or dish.
  • Add a layer of granola on top of the yogurt. You can use your favorite store-bought granola or make your own.
  • Serve immediately or refrigerate until ready to serve.
